This Easy One Pot Skillet Lasagna is a great alternative to regular lasagna. This is truly a family favorite-tasty and easy to whip up for any night of the week!

Makes  5 (1 heaping cup servings)

What ingredients do I need to make this One Pot Easy Lasagna Skillet?

  • Lean ground beef– I love using 96% lean ground beef. You could substitute the lean ground beef for ground turkey or chicken, if you desire.
  • Uncooked "no yolk" egg noodles or whole wheat egg noodles– if you have whole grain pasta as a zero point food, you can use whole wheat egg noodles for zero points.
  • No sugar added Prego Italian Sauce or you can save 2 SmartPoints per serving if you replace it with my Zero Point Marinara Sauce
  • Fat free ricotta cheese- I find the fat free ricotta at my local Walmartstore. If you can't locate the fat free ricotta cheese-you can use part-skim ricotta cheese, for additional points.
  • Light shredded mozzarella cheese- I like to use Pantry Market light mozzarella fromTarget
  • Grated Parmesan cheese
  • Minced onion
  • Dried parsley

How do I make this One Pot Easy Lasagna Skillet?

Spray a large skillet with non stick cooking spray.

Cook beef or meat and minced onion over medium heat until the meat is no longer pink.

Stir in marinara sauce, noodles and water.

In a small bowl, combine ricotta cheese, Parmesan cheese, and parsley.

Fold in the mozzarella cheese.

Using a tablespoon drop cheese mixture by the spoonful over cooked pasta.

 Cook for an additional 1-2 minutes until cheeses slightly melt.

Ingredients:

  • 1 lb. 96% lean ground beef
  • 1 tsp minced dry onions
  • 5 oz. uncooked "no yolk" egg noodles or whole wheat pasta egg noodles
  • 1 cup water
  • 2 cups no sugar added Prego Italian Sauce or you can save 2 Personalpoints per serving if you replace jarred spaghetti sauce with my Zero Point Marinara Sauce
  • 1/2 cup fat free ricotta cheese or part-skim ricotta cheese
  • 1 tsp dried parsley
  • 2 oz. light shredded mozzarella cheese
  • 2 Tbsp grated Parmesan cheese

Directions:

  1. Spray a large skillet with non stick cooking spray, cook beef or sausage and minced onion over medium heat until the meat is no longer pink. Stir in marinara sauce, noodles and water.
  2. Bring mixture to a boil. Reduce heat, simmer, covered for 6-8 minutes until noodles are tender. Stirring occasionally.
  3. In a small bowl, combine ricotta cheese, Parmesan cheese, and parsley. Then fold in mozzarella cheese.
  4. Using a tablespoon drop cheese mixture by the spoonful over cooked pasta.  Cook for an additional 1-2 minutes until cheeses slightly melt.
